How To Make Lancashire Hotpot

Don’t pass up the chance to try something new with our delicious lamb recipes! Serve any lamb dish and they’re sure to be the star of the dining table. Just pair this delicious meat with garlic, rosemary, and other flavorful ingredients and you’ll have a truly memorable meal.

Serves:

Ingredients

  • 500g lamb stewing meat, cut into chunks
  • 2 large onions, thinly sliced
  • 4 large potatoes, thinly sliced
  • 2 carrots, sliced
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 500ml beef stock
  • 2 sprigs of fresh thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 160°C (320°F).

  2. In a large ovenproof casserole dish, layer half of the onions at the bottom.

  3. Season the lamb chunks with salt and pepper, then place a layer of lamb on top of the onions.

  4. Repeat the layers with the remaining onions and lamb.

  5. Arrange the potato slices on top in an overlapping pattern.

  6. Scatter the carrot slices over the potatoes.

  7. In a small saucepan, melt the butter over medium heat. Stir in the flour to make a roux.

  8. Gradually whisk in the beef stock until smooth.

  9. Add the thyme sprigs and season with salt and pepper.

  10. Pour the gravy mixture over the potatoes and meat in the casserole dish.

  11. Cover the dish with a lid and transfer to the preheated oven.

  12. Bake for 1 hour, then remove the lid and bake for another 1 hour until the potatoes are golden and the lamb is tender.

  13. Serve hot and enjoy!
