How To Make Lamb, squash & apricot tagine

Ingredients
- 1 ½ lbs lamb shoulder, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- ¼ tsp cayenne pepper
- 2 cups butternut squash, peeled and diced
- 1 cup dried apricots
- 2 cups chicken broth
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

Heat olive oil in a large pot or tagine over medium heat. Add the lamb and brown on all sides.

Add the onion and garlic to the pot and cook until softened.

Stir in the cumin, coriander, cinnamon, ginger, and cayenne pepper. Cook for 1 minute until fragrant.

Add the butternut squash, dried apricots, and chicken broth to the pot. Season with salt and pepper.

Bring the mixture to a boil, then reduce heat to low and cover. Simmer for 1 ½ – 2 hours, or until the lamb is tender.

Serve the tagine hot, garnished with fresh cilantro. Serve with couscous or crusty bread.
