Ingredients
- 8 lamb chops
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp olive oil
- 1 cup cherry tomatoes
- 2 cloves of garlic, minced
- 1 tsp dried oregano
- 1/2 cup hummus
- Fresh parsley, for garnish
Instructions

Preheat the oven to 400°F (200°C).

Season the lamb chops with salt and pepper on both sides.

Heat olive oil in a large skillet over medium-high heat.

Sear the lamb chops for 2-3 minutes on each side, until browned.

Remove the lamb chops from the skillet and transfer them to a baking dish.

In the same skillet, add cherry tomatoes, garlic, and dried oregano. Cook for 5 minutes, until the tomatoes start to soften.

Pour the tomato mixture over the lamb chops in the baking dish.

Bake in the preheated oven for 10-12 minutes for medium-rare, or longer if desired.

Serve the lamb chops with a dollop of hummus and garnish with fresh parsley.
