How To Make Lamb Biryani

Ingredients

  • 500g lamb, cut into pieces
  • 2 cups basmati rice
  • 2 onions, sliced
  • 4 cloves of garlic, minced
  • 1-inch ginger, grated
  • 2 tomatoes, diced
  • 2 green chilies, slit
  • 1/2 cup yogurt
  • 1 tsp garam masala
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 cup chopped mint leaves
  • 1/2 cup chopped cilantro leaves
  • 4 cups water
  • Salt to taste
  • Ghee or oil for cooking

Instructions

  1. Rinse the basmati rice under running water and soak it for 30 minutes. Drain and set aside.

  2. Heat ghee or oil in a large, deep pan over medium heat. Add the sliced onions and cook until golden brown. Remove half of the onions and set aside for garnishing.

  3. To the remaining onions in the pan, add the minced garlic and grated ginger. Sauté for a minute until fragrant.

  4. Add the diced tomatoes and cook until they turn mushy.

  5. Add the lamb pieces and cook until they are browned on all sides.

  6. In a bowl, whisk together yogurt, garam masala, turmeric powder, red chili powder, cumin powder, coriander powder, mint leaves, and cilantro leaves. Add this mixture to the pan and mix well.

  7. Add the soaked and drained rice to the pan and mix gently to combine with the lamb and spices.

  8. Pour in the water and season with salt. Bring the mixture to a boil, then reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes or until the rice is cooked and the lamb is tender.

  9. Once cooked, fluff the rice with a fork and garnish with the reserved fried onions.

  10. Serve hot with raita or salad.
