A flavorful and aromatic Mediterranean dish made with ground lamb and tender couscous.

Ingredients
- 1 lb. ground lamb
- 1 cup couscous
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp. olive oil
- 1 tsp. ground cumin
- 1 tsp. dried oregano
- 1/2 tsp. smoked paprika
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions

In a large skillet, heat the olive oil over medium-high heat. Add the ground lamb and cook until browned, breaking it up as it cooks, about 8-10 minutes.

Add the onion, garlic, red bell pepper, cumin, oregano, paprika, salt, and pepper. Cook until the vegetables are tender, about 5-7 minutes.

Meanwhile, in a separate pot, cook the couscous according to package directions.

Add the chickpeas to the skillet and cook until heated through, about 2-3 minutes.

Serve the lamb mixture over the couscous and garnish with fresh parsley.
