- 4 whole wheat pitas
- 1 lb ground lamb
- 1/2 red onion, chopped
- 2 garlic cloves, minced
- 1 tomato, diced
- 1 tbsp tomato paste
- 2 tsp dried oregano
- Salt and pepper, to taste
- 1/2 cup crumbled feta cheese
- Fresh parsley, chopped
- Lemon wedges (optional)
Instructions

Preheat oven to 400°F.

In a large skillet, brown the ground lamb over medium-high heat. Drain any excess fat.

Add the chopped onion and garlic to the skillet and sauté until softened, about 5 minutes.

Stir in the diced tomato, tomato paste, oregano, salt, and pepper. Cook for an additional 5 minutes, until the tomato has broken down and the mixture has thickened.

Place the pitas on a baking sheet lined with parchment paper. Spoon the lamb mixture evenly over each pita, leaving a small border around the edges.

Top the lamb mixture with the crumbled feta cheese.
