Ingredients
- 2 pounds lamb shoulder, boneless and cut into cubes
- 2 lemons, juiced and zested
- 4 cloves of garlic, minced
- 2 tablespoons fresh thyme leaves
- 1 teaspoon dried oregano
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions

In a large bowl, combine the lemon juice, lemon zest, garlic, thyme, oregano, olive oil, salt, and black pepper.

Add the lamb cubes to the bowl and toss until well coated with the marinade. Let it marinate for at least 1 hour, or overnight in the refrigerator for deeper flavors.

Preheat the oven to 325°F (165°C).

Heat a large ovenproof skillet over medium-high heat. Add the marinated lamb and sear on all sides until browned, about 5 minutes.

Transfer the skillet to the preheated oven and roast for 2 hours, or until the lamb is tender and cooked to your desired doneness.

Remove the lamb from the oven and let it rest for 5 minutes before serving.

Serve the Greek-style lamb with lemon & thyme with your choice of side dish, such as roasted potatoes or a Greek salad.
