How To Make Star Anise and Gingerbread Cupcakes
Deliciously spiced cupcakes with the warmth of star anise and gingerbread.

Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp ground star anise
- 1/2 cup unsalted butter, softened
- 3/4 cup packed light brown sugar
- 1/4 cup molasses
- 2 large eggs
- 1/2 cup buttermilk
Instructions

Preheat oven to 350°F. Line a cupcake tin with paper liners.

In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and star anise.

In a large bowl, cream together butter, brown sugar, and molasses until light and fluffy.

Beat in the eggs, one at a time, until well incorporated.

Gradually stir in the flour mixture, alternating with the buttermilk, beginning and ending with the flour.

Spoon batter into prepared cupcake tin, filling each liner about 2/3 full.

Bake for 20-25 minutes until a toothpick inserted into the center of a cupcake comes out clean.

Let cupcakes cool in pan for 5 minutes, then transfer to a wire rack to cool completely before serving.
