How To Make Saffron and Orange Scones

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup cold butter, diced
  • 2 eggs, beaten
  • 1/2 cup heavy cream
  • 1/4 cup fresh orange juice
  • 1/4 tsp saffron threads
  • 1 tbsp orange zest

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.

  2. In a small bowl, mix together orange juice, saffron threads, and orange zest. Let it sit while you prepare the rest of the ingredients.

  3. In a large bowl, whisk together flour, sugar, baking powder, and salt.

  4. Add cold diced butter to the flour mixture. Use a pastry cutter or your fingers to incorporate the butter until the mixture resembles coarse crumbs.

  5. In a separate bowl, whisk together eggs and heavy cream. Add the saffron-orange mixture to the egg mixture and stir to combine.

  6. Pour the egg mixture over the flour mixture and stir until just combined.

  7. Place the dough on a floured surface and knead briefly until it comes together in a ball. Pat the dough into a circle and cut it into 8 wedges.

  8. Place the scones on the prepared baking sheet and bake for 18-20 minutes, or until golden brown.

  9. Serve warm with tea or coffee.
