Ingredients
- 1 lb of carrots
- 1 tbsp of olive oil
- 2 tbsp of honey
- 1 tsp of ground cardamom
- Salt and pepper, to taste
Instructions

Preheat oven to 375°F.

Rinse and dry carrots, then cut into thin circles.

In a small bowl, mix together olive oil, honey, cardamom, salt, and pepper.

Place sliced carrots on a baking sheet and drizzle with honey mixture, tossing to coat evenly.

Roast in the oven for 20-25 minutes, until the carrots are tender and lightly browned.

Carefully remove from oven and serve immediately.
