Ingredients
- 1 unbaked pie crust
- 1 large onion, thinly sliced
- 1 tbsp olive oil
- 1 tsp caraway seeds
- 4 eggs
- 1 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese

Preheat oven to 375F.

In a large skillet, heat olive oil over medium heat. Add onion and caraway seeds and cook, stirring occasionally, until onion is caramelized and tender, about 15-20 minutes.

Meanwhile, whisk together eggs, milk, salt, and black pepper in a mixing bowl.

Roll out pie crust and press into a 9-inch pie dish. Prick bottom with a fork.

Spread caramelized onions over pie crust. Pour egg mixture over onions. Sprinkle with Parmesan cheese.

Bake for 30-35 minutes, until center is set and top is golden brown.
