How To Make Marjoram and White Bean Soup

A comforting and hearty soup that is perfect for a chilly day.

Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried marjoram
  • 3 cups vegetable broth
  • 2 cans white beans, drained and rinsed
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium heat.

  2. Add onion and garlic and cook until softened, about 5 minutes.

  3. Add marjoram and cook for an additional minute.

  4. Add broth and beans and bring to a boil.

  5. Reduce heat and simmer for 30 minutes.

  6. Puree half of the soup in a blender and return it to the pot.

  7. Stir in Parmesan cheese and season with salt and pepper.
