How To Make Marjoram and Cranberry Quinoa Salad

A refreshing and healthy salad with the nutty flavors of quinoa, tangy cranberries, and the herby notes of Marjoram.

Ingredients

  • 1 cup quinoa
  • 1 ¾ cups water
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp chopped fresh Marjoram leaves

  • In a medium saucepan, add quinoa and water and bring to a boil. Reduce heat to low, cover and simmer for 15-20 minutes, or until all the water is absorbed.

  • In a large mixing bowl, whisk together olive oil, apple cider vinegar, salt, and pepper.

  • Add cooked quinoa, Marjoram, cranberries, and pecans to the mixing bowl and toss well.

  • Serve over a bed of baby spinach leaves.
