Ingredients
- 1 small green papaya, peeled and thinly sliced
- 1 large carrot, peeled and julienned
- 1 red bell pepper, thinly sliced
- 1/2 red onion, thinly sliced
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped roasted peanuts
- 1 stalk lemongrass, tough outer layer removed and thinly sliced
- 1 tablespoon lime juice
- 1 tablespoon fish sauce
- 1 tablespoon honey
- 1 tablespoon vegetable oil
Instructions

In a large bowl, combine the green papaya, carrot, red bell pepper, red onion, cilantro, mint, and peanuts.

In a small bowl, whisk together the lemongrass, lime juice, fish sauce, honey, and vegetable oil.

Pour the dressing over the salad and toss to coat.
