How To Make Veggie Shepherd’s Pie with Sweet Potato Mash

Ingredients
- 4 large sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 1 cup frozen peas
- 1 cup vegetable broth
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- salt and pepper, to taste
Instructions

Preheat oven to 400°F (200°C).

Boil the sweet potatoes in a large pot of salted water until tender. Drain and set aside.

In a separate large skillet, heat the olive oil over medium heat. Add the onion, carrots, celery, bell pepper, and garlic. Cook until the vegetables are tender.

Stir in the frozen peas, vegetable broth, tomato paste, dried thyme, dried rosemary, salt, and pepper. Simmer for 5 minutes.

Transfer the vegetable mixture to a baking dish.

Mash the cooked sweet potatoes with a potato masher or fork until smooth. Season with salt and pepper to taste.

Spread the sweet potato mash evenly over the vegetable mixture in the baking dish.

Bake for 20-25 minutes, or until the sweet potato topping is golden and the filling is bubbly.
