- 2 tablespoons olive oil
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper to taste

Preheat the oven to 400°F (200°C).

In a large baking dish, combine the sweet potato, carrots, Brussels sprouts, red bell pepper, onion, and garlic.
