Ingredients
- 1 large zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 1 cup cherry tomatoes
- 3 tbsp olive oil
- Salt and black pepper, to taste
- 10 oz whole wheat pasta
- 1/4 cup grated parmesan cheese
- 2 tbsp fresh basil leaves

Preheat the oven to 400°F.

In a baking dish, mix the sliced zucchini, red bell pepper, yellow onion, and cherry tomatoes with olive oil, salt, and black pepper. Roast for 20-25 minutes until the vegetables are tender and slightly browned.

While the vegetables are roasting, cook the pasta according to the package instructions until al dente. Drain and set aside.

In a large mixing bowl, combine the pasta with the roasted vegetables. Toss to coat evenly.
