How To Make Vegetarian Low Carb Stuffed Bell Peppers Recipe
Colorful bell peppers filled with a delicious low carb stuffing in this vegetarian dish.

Ingredients
- 4 large bell peppers, cut in half and seeded
- 1 cup cooked quinoa
- 1 cup chopped cauliflower
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/2 cup crumbled feta cheese
- 1 tsp each of dried oregano, thyme, and basil
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions

Preheat oven to 375°F.

Heat olive oil in a pan over medium heat and sauté onion and garlic until fragrant.

Add chopped cauliflower and sauté for another 3-4 minutes.

Add cooked quinoa, dried herbs, salt, and pepper and mix well.

Stuff the pepper halves with this mixture and place on a baking sheet.

Bake for 30-35 minutes.

Top with fresh parsley and crumbled feta cheese before serving.
