How To Make Mexican Cauliflower Rice Recipe
A healthy twist on traditional Mexican rice by using cauliflower instead of white rice.

Ingredients
- 1 head of cauliflower, grated
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh cilantro to garnish
Instructions

Grate 1 head of cauliflower using a grater or food processor and set aside.

In a large skillet, heat olive oil over medium heat and sauté onion and garlic until softened and fragrant.

Add grated cauliflower to the skillet and sprinkle chili powder, cumin, paprika, salt, and pepper. Stir well to combine.

Cover the skillet and cook until cauliflower is tender, for about 10 minutes, stirring occasionally.

Garnish with fresh cilantro before serving.
