Ingredients
- 1 block of firm tofu, drained and diced
- 2 cups of cherry tomatoes, halved
- 1 English cucumber, chopped
- 1 red onion, sliced
- 1/2 cup of kalamata olives, pitted
- 1/2 cup of crumbled feta cheese
- 1/4 cup of extra-virgin olive oil
- 2 tbsp of freshly squeezed lemon juice
- 1 tsp of dried oregano
- Salt and pepper, to taste
- 2 cups of lettuce or mixed greens
Instructions

In a large bowl, combine the tofu, tomatoes, cucumber, onion, olives, and feta cheese.

In a small bowl, whisk together the olive oil, lemon juice, oregano, salt and pepper.

Pour the dressing over the salad and toss to coat evenly.

Serve on a bed of lettuce or mixed greens.
