How To Make Vegetarian Instant Pot Lentil Soup Recipe
A hearty and healthy soup made with lentils, vegetables, and flavorful spices.
Serves:
Ingredients
- 1 cup of dry green lentils
- 4 cups of vegetable broth
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 2 tbsp olive oil
- Fresh parsley, chopped (optional)
Instructions

Rinse the lentils and set aside.

Press the “Sauté” button on your Instant Pot. Add the olive oil, onion, carrots, celery, and garlic.

Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.

Add the cumin, smoked paprika, salt, black pepper, and lentils. Stir well.

Pour the vegetable broth into the Instant Pot. Close the lid and set the valve to “Sealing”.

Press the “Pressure Cook” or “Manual” button and set the timer for 20 minutes.

Once done, let the pressure release naturally for 10 minutes before opening the Instant Pot.

Serve warm and garnish with chopped fresh parsley, if desired.
