How To Make Vegetarian Egg-Fried Rice

Ingredients
- 2 cups cooked rice
- 2 tbsp vegetable oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 tbsp soy sauce
- 2 tsp sesame oil
- 2 eggs, beaten
- Salt and pepper to taste
- Green onions, for garnish
Instructions

Heat vegetable oil in a large skillet or wok over medium heat.

Add diced onion and minced garlic, sauté until fragrant and onion is translucent.

Add mixed vegetables and cook until tender.

Push the vegetables to one side of the skillet and pour the beaten eggs into the other side.

Cook the eggs, stirring occasionally, until they are scrambled and cooked through.

Add the cooked rice to the skillet and stir to combine with the vegetables and eggs.

Drizzle soy sauce and sesame oil over the rice and mix well.

Season with salt and pepper to taste.

Cook for another 3-4 minutes, stirring continuously, until everything is heated through.

Serve hot, garnished with chopped green onions.
