Ingredients
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 large sweet potato, peeled and diced
- 2 medium carrots, peeled and sliced
- 1 large onion, finely chopped
- 1 red bell pepper, seeded and diced
- 2 cloves garlic, minced
- 1 can (14 ounces) diced tomatoes, undrained
- 1 can (13.5 ounces) coconut milk
- 1 tablespoon curry powder
- 1/2 teaspoon ground cumin
- Salt and black pepper, to taste
- Chopped fresh cilantro, for garnish (optional)
Instructions

In the crockpot, combine the chickpeas, sweet potato, carrots, onion, bell pepper, garlic, tomatoes, coconut milk, curry powder, ground cumin, salt, and black pepper. Stir well to combine.

Cover and cook on high for 4 hours or low for 6 hours, until the vegetables are tender and the sauce has thickened.
