How To Make Vegetarian Cottage Pie

Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 cup frozen peas
- 1 cup vegetable broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp paprika
- Salt and pepper to taste
- 4 cups mashed potatoes
- Chopped parsley for garnish (optional)
Instructions

Preheat oven to 400°F (200°C).

Heat olive oil in a large skillet over medium heat. Add the onion, carrots, celery, and garlic. Cook until vegetables are softened, about 5 minutes.

Add the red bell pepper, zucchini, mushrooms, and peas to the skillet. Cook for another 5 minutes.

In a small bowl, whisk together vegetable broth, tomato paste, thyme, rosemary, paprika, salt, and pepper. Pour this mixture into the skillet and stir well to combine.

Simmer the vegetable mixture for 10 minutes, or until the liquid has reduced and thickened slightly.

Transfer the vegetable mixture to a baking dish. Spread the mashed potatoes evenly over the top.

Bake in the preheated oven for 20 minutes, or until the mashed potatoes are golden and the filling is hot and bubbly.

Serve hot, garnished with chopped parsley if desired.
