How To Make Vegetarian Bolognese
Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 carrots, finely chopped
- 2 celery stalks, finely chopped
- 3 cloves of garlic, minced
- 1 cup dried lentils, rinsed
- 1 can (14 oz) crushed tomatoes
- 2 tbsp tomato paste
- 1 cup vegetable broth
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- Cooked spaghetti or pasta of your choice, for serving
- Fresh basil leaves, for garnish
- Grated Parmesan cheese, for serving (optional)
Instructions

Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables are soft, about 5 minutes.

Add the minced garlic and cook for an additional 1 minute.

Add the lentils, crushed tomatoes, tomato paste, vegetable broth, dried oregano, dried basil, salt, and pepper. Stir well to combine.

Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 30-40 minutes, or until the lentils are tender and the flavors have melded together.

While the sauce is simmering, cook your pasta according to package instructions until al dente.

Serve the vegetarian Bolognese sauce over the cooked pasta. Garnish with fresh basil leaves and grated Parmesan cheese, if desired.
