Ingredients
- 1 cup cooked black beans
- 1 cup cooked rice
- 1 red bell pepper, diced
- 1 small red onion, diced
- 2 cloves of garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 large flour tortillas
- 1 cup shredded cheese (optional)
- Salsa, sour cream, or guacamole for serving
Instructions

In a large skillet, heat some olive oil over medium heat. Add the diced red bell pepper and red onion. Cook until softened, about 5 minutes.

Add the minced garlic, cumin, chili powder, paprika, salt, and black pepper to the skillet. Stir to combine and cook for another minute.

Add the cooked black beans and cooked rice to the skillet. Stir well to coat everything in the spice mixture. Cook for another 5 minutes, until heated through.

Warm the flour tortillas in a dry skillet or in the microwave.

Divide the black bean and rice mixture among the tortillas, placing it in the center of each tortilla. If using cheese, sprinkle some on top of the mixture.

Fold the sides of the tortillas over the filling, then roll them tightly to form burritos.

Serve the vegetarian black bean burritos with salsa, sour cream, or guacamole.
