Ingredients
- 2 zucchinis, sliced
- 2 bell peppers, diced
- 1 eggplant, sliced
- 1 red onion, thinly sliced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- 1 cup of shredded mozzarella cheese
- Fresh basil leaves for garnish
Instructions

Preheat the oven to 375°F (190°C).

In a large baking dish, combine the zucchinis, bell peppers, eggplant, red onion, and minced garlic.

Drizzle the olive oil over the vegetables and toss to coat evenly.

Sprinkle the dried thyme, dried oregano, salt, and pepper over the vegetables and toss again to season evenly.

Place the baking dish in the preheated oven and bake for 20 minutes.

After 20 minutes, remove the baking dish from the oven and sprinkle the shredded mozzarella cheese over the vegetables.

Return the baking dish to the oven and continue baking for an additional 10 minutes, or until the cheese has melted and turned golden brown.

Once baked, remove from the oven and let it cool for a few minutes before serving.

Garnish with fresh basil leaves before serving.
