How To Make Ultimate Falafel Wrap

Ingredients
- 2 cups cooked chickpeas
- 1/2 red onion, chopped
- 3 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 4 whole wheat tortillas
- 1 cup chopped lettuce
- 1/2 cup diced tomatoes
- 1/4 cup diced cucumbers
- 1/4 cup sliced red onions
- 1/4 cup tzatziki sauce
Instructions

In a food processor, combine the chickpeas, red onion, garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and lemon juice. Pulse until well combined but still slightly chunky.

Transfer the mixture to a bowl and stir in the flour. Form the mixture into small patties.

Heat the olive oil in a large skillet over medium heat. Cook the falafel patties for about 4 minutes on each side, or until golden brown and crispy.

Warm the tortillas in a dry skillet or microwave for a few seconds. Place a tablespoon of tzatziki sauce on each tortilla.

Top each tortilla with a few falafel patties, lettuce, tomatoes, cucumbers, and red onions. Fold the sides of the tortilla in and roll tightly to form a wrap.

Slice the wraps in half and serve.
