How To Make Tofu, Greens & Cashew Stir-Fry
Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.
Serves:
Ingredients
- 1 block of tofu, drained and cut into cubes
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 2 cloves of garlic, minced
- 1 tablespoon of ginger, grated
- 1 red bell pepper, thinly sliced
- 2 cups of mixed greens (spinach, kale, or bok choy)
- 1/2 cup of cashews
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions

In a large non-stick skillet or wok, heat the sesame oil over medium-high heat.

Add the garlic and ginger and sauté for 1-2 minutes until fragrant.

Add the tofu cubes and cook for 5-7 minutes until golden brown on all sides.

Stir in the soy sauce and red bell pepper. Cook for another 2-3 minutes until the pepper is slightly softened.

Add the mixed greens and cashews to the skillet. Toss everything together and cook for 1-2 minutes until the greens are wilted.

Season with salt and pepper to taste.

Serve the stir-fry over cooked rice or noodles.
