Ingredients
- 8 whole wheat lasagne noodles
- 1 lb lean ground turkey
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 cup sliced mushrooms
- 1 can (14 oz) crushed tomatoes
- 1 can (6 oz) tomato paste
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup low-fat cottage cheese
- 1/2 cup grated Parmesan cheese
- 1 cup shredded reduced-fat mozzarella cheese
Instructions

Preheat the oven to 375°F (190°C).

Cook the lasagne noodles according to package instructions. Drain and set aside.

In a large skillet, cook the ground turkey over medium heat until browned. Add the onion, garlic, bell pepper, and mushrooms, and cook until vegetables are tender.

Stir in the crushed tomatoes, tomato paste, dried basil, dried oregano, salt, and black pepper. Simmer for 10 minutes.

In a separate bowl, combine the cottage cheese and Parmesan cheese.

In a 9×13 inch baking dish, spread 1/3 of the turkey mixture on the bottom. Top with 4 lasagne noodles, followed by 1/2 of the cottage cheese mixture. Repeat the layers, ending with the remaining turkey mixture on top.

Sprinkle the shredded mozzarella cheese evenly over the lasagne.

Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.

Let the lasagne cool for a few minutes before serving.
