Ingredients
- 8 oz rice noodles
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped peanuts
- 1/4 cup chopped green onions
- 2 tbsp fish sauce
- 2 tbsp lime juice
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp sesame oil
- 1 tsp minced garlic
- 1/2 tsp red pepper flakes
Instructions

Cook rice noodles according to package instructions. Drain and rinse with cold water.

In a large bowl, combine shredded carrots, sliced cucumber, cilantro, mint, peanuts, and green onions.

In a small bowl, whisk together fish sauce, lime juice, soy sauce, honey, sesame oil, minced garlic, and red pepper flakes.

Add cooked rice noodles to the bowl of vegetables and pour the dressing over the top.

Toss well to combine and coat everything in the dressing.

Serve immediately or refrigerate for later. Enjoy!
