How To Make Thai Coconut & Veg Broth

Ingredients
- 1 tbsp vegetable oil
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 carrot, thinly sliced
- 1 zucchini, thinly sliced
- 8 oz mushrooms, sliced
- 1 can (14 oz) coconut milk
- 4 cups vegetable broth
- 2 tbsp soy sauce
- 1 tbsp Thai red curry paste
- 1 tbsp lime juice
- 1 tsp brown sugar
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions

In a large pot, heat the vegetable oil over medium heat. Add the onion and garlic, and sauté until softened and fragrant.

Add the red bell pepper, carrot, zucchini, and mushrooms to the pot. Cook for 5 minutes, stirring occasionally.

Pour in the coconut milk, vegetable broth, soy sauce, Thai red curry paste, lime juice, and brown sugar. Stir well to combine.

Bring the broth to a simmer and let it cook for 15-20 minutes, until the vegetables are tender.

Season with salt and pepper to taste.

Serve the Thai Coconut & Veg Broth hot, garnished with fresh cilantro.
