How To Make Teriyaki Noodle Broth

Ingredients
- 8 oz udon noodles
- 4 cups vegetable broth
- 1/4 cup soy sauce
- 2 tbsp mirin
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp sesame oil
- 1 cup shiitake mushrooms, sliced
- 1 cup bok choy, chopped
- 1/2 cup carrot, julienned
- 4 green onions, chopped
- 1/4 cup cilantro, chopped
- Sesame seeds, for garnish
Instructions

Cook the udon noodles according to package instructions. Drain and set aside.

In a large pot, combine the vegetable broth, soy sauce, mirin, brown sugar, garlic, ginger, and sesame oil. Bring to a simmer over medium heat.

Add the mushrooms, bok choy, and carrot to the broth. Cook for 5-7 minutes until vegetables are tender.

Divide the cooked udon noodles among 4 bowls. Ladle the hot broth and vegetables over the noodles.

Garnish with green onions, cilantro, and sesame seeds.
