Ingredients
- 1 cup sweetcorn kernels
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 green onions, thinly sliced
- 1/4 cup chopped cilantro
- 1/4 cup milk
- 1 egg
- 1 avocado, sliced
- 100g crispy chorizo, crumbled
Instructions

In a large mixing bowl, combine the sweetcorn kernels, flour, baking powder, salt, green onions, cilantro, milk, and egg. Mix until well combined.

Heat oil in a large skillet over medium heat. Spoon the sweetcorn mixture into the skillet to form fritters. Cook for 3-4 minutes on each side until golden brown and cooked through.

Remove the fritters from the skillet and drain on a paper towel.

To serve, top each fritter with slices of avocado and crispy chorizo.
