How To Make Sweet Potato Nachos

Ingredients
- 2 large sweet potatoes, sliced into thin rounds
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1 cup shredded cheddar cheese
- 1/2 cup black beans, rinsed and drained
- 1/4 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup sliced jalapenos
- 1/4 cup chopped cilantro
- Optional toppings: salsa, guacamole, sour cream
Instructions

Preheat oven to 425°F (220°C). Place sweet potato rounds in a single layer on a baking sheet.

In a small bowl, mix together olive oil, chili powder, cumin, paprika, garlic powder, and salt. Drizzle mixture over sweet potato rounds, tossing to coat evenly.

Bake in the preheated oven for 25-30 minutes, flipping halfway, until sweet potatoes are crispy and golden.

Remove from oven and sprinkle shredded cheddar cheese over the sweet potato rounds. Return to oven for 2-3 minutes, until cheese is melted and bubbly.

Remove from oven and top with black beans, diced tomatoes, red onion, jalapenos, and cilantro. Add any optional toppings desired.
