How To Make Sweet Potato & Cauliflower Lentil Bowl

Ingredients
- 2 sweet potatoes, peeled and cubed
- 1 head of cauliflower, cut into florets
- 1 cup of green lentils
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 cups of baby spinach
- 1 avocado, sliced
- 1/4 cup of chopped fresh cilantro
- Juice of 1 lemon
Instructions

Preheat the oven to 400°F (200°C).

In a bowl, toss the sweet potatoes and cauliflower with olive oil, cumin, paprika, salt, and pepper.

Spread the sweet potatoes and cauliflower on a baking sheet and roast for 25-30 minutes, or until they are tender and slightly crispy.

While the vegetables are roasting, cook the lentils according to package instructions.

In a large bowl, combine the roasted sweet potatoes, cauliflower, lentils, baby spinach, avocado, cilantro, and lemon juice.

Toss everything together until well combined.
