- 8 eggs
- 1/4 cup spinach, chopped
- 1/4 cup mushrooms, sliced
- 1/4 cup bell peppers, diced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions

In a large bowl, whisk together the eggs, salt, and black pepper.

Heat olive oil in a non-stick skillet over medium heat.

Add the spinach, mushrooms, and bell peppers to the skillet and sauté for 2-3 minutes until softened.

Pour the egg mixture into the skillet and let it cook for 1 minute until the edges start to set.

Gently stir the eggs, incorporating the vegetables evenly.

Add the cherry tomatoes and feta cheese, and continue cooking for another 2-3 minutes until the eggs are cooked through.
