Ingredients
- 1 rainbow baguette
- 1 cup cherry tomatoes, halved
- 1 bell pepper, thinly sliced
- 1 cucumber, thinly sliced
- 1/2 red onion, thinly sliced
- 1 cup mixed salad greens
- 1/4 cup fresh basil leaves
- 1/4 cup fresh parsley leaves
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions

Slice the rainbow baguette in half lengthwise, creating a top and bottom piece.

Hollow out the inside of the baguette halves, creating a bread bowl.

In a large mixing bowl, combine the cherry tomatoes, bell pepper, cucumber, red onion, mixed salad greens, basil leaves, parsley leaves, olive oil, and balsamic vinegar.

Toss the vegetable mixture until well coated in the dressing. Season with salt and pepper to taste.

Spoon the vegetable mixture into the hollowed-out baguette halves, packing it tightly.

Place the top piece of the baguette back on and press down gently to secure the filling.

Slice the stuffed baguette into individual portions and serve.
