Ingredients
- 2 cups of brown rice
- 4 cups of broccoli florets
- 1 cup of sliced bell peppers
- 1 cup of sliced carrots
- 1 cup of sliced mushrooms
- 1/4 cup of low-sodium soy sauce
- 2 tablespoons of sesame oil
- 2 cloves of garlic, minced
- 1 teaspoon of grated ginger
- 1/4 teaspoon of red pepper flakes (optional)
Instructions

Cook brown rice according to package instructions.

In a large skillet or wok, heat sesame oil over medium heat.

Add minced garlic, ginger, and red pepper flakes (if using) to the skillet and cook for 1-2 minutes until fragrant.

Add sliced bell peppers, carrots, and mushrooms to the skillet and stir-fry for 3-4 minutes until slightly tender.

Add broccoli florets to the skillet and cook for an additional 2-3 minutes until broccoli is bright green and crisp-tender.

Stir in cooked brown rice and soy sauce, and cook for another 2-3 minutes until everything is well combined and heated through.
