How To Make Squash with Rice, Sage & Goat’s Cheese

Ingredients
- 1 medium-sized butternut squash, peeled, seeded, and cut into cubes
- 1 cup of rice
- 2 tablespoons of olive oil
- 4 cloves of garlic, minced
- 1 tablespoon of fresh sage, chopped
- 4 ounces of goat’s cheese, crumbled
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

In a large pot, bring water to a boil and cook the rice according to the package instructions. Drain and set aside.

In a separate pan, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant.

Add the cubed butternut squash to the pan and cook until tender, approximately 10-15 minutes.

Stir in the chopped sage and season with salt and pepper.

Add the cooked rice to the pan and mix well, allowing the flavors to combine.

Transfer the mixture to a baking dish and top with crumbled goat’s cheese.

Bake in the preheated oven for 15-20 minutes, or until the cheese is golden and bubbly.
