Ingredients
- 6 large eggs
- 1 medium butternut squash, peeled, seeded, and cut into small cubes
- 1 tbsp olive oil
- 1 tbsp chopped fresh sage leaves
- 1 cup shredded gruyère cheese
- Salt and pepper to taste
Instructions

Preheat the oven to 350°F (175°C).

In a large skillet, heat the olive oil over medium heat. Add the butternut squash and cook until tender, about 10 minutes.

In a bowl, whisk the eggs until well beaten. Stir in the cooked butternut squash, sage, and gruyère cheese. Season with salt and pepper.

Pour the egg mixture into a greased 9-inch pie dish or oven-safe skillet.

Bake in the preheated oven for 20 minutes, or until the frittata is set and golden brown on top.

Remove from the oven and let it cool for a few minutes before slicing.
