Ingredients
- 2 cups mashed cooked squash
- 1 egg
- 2 cups all-purpose flour
- 1/2 tsp salt
- sauce of your choice (e.g. marinara, pesto, butter)
Instructions

In a large bowl, mix the mashed squash, egg, flour, and salt until a dough forms.

Divide the dough into small portions and roll each portion into a rope.

Cut the rope into small pieces and use a fork to make ridges on each piece.

Bring a large pot of salted water to a boil and cook the gnocchi until they float to the surface, about 2-3 minutes.

Drain the gnocchi and toss them with your favorite sauce.
