How To Make Sprouting broccoli, green romesco & almonds

Ingredients
- 1 pound sprouting broccoli
- 1/2 cup almonds, sliced
- 1/4 cup olive oil
- 1/4 cup parsley leaves
- 1/4 cup basil leaves
- 1/4 cup roasted green peppers
- 2 garlic cloves
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Instructions

Trim the tough ends of the sprouting broccoli and blanch in boiling salted water for 3-4 minutes. Drain and set aside.

In a food processor, combine the almonds, olive oil, parsley, basil, roasted green peppers, garlic cloves, red wine vinegar, salt, and pepper. Blend until smooth.

Heat a large skillet over medium heat and add the green romesco sauce. Cook for 1-2 minutes until warmed through.

Add the blanched sprouting broccoli to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes until heated and slightly tender.

Serve the sprouting broccoli and green romesco topped with sliced almonds.
