Serves:

Ingredients

  • 4 cups sprouts (such as broccoli sprouts or mixed bean sprouts)
  • 2 oranges, segmented
  • 1 grapefruit, segmented
  • 1 pomegranate, seeds only
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup chopped fresh cilantro leaves
  • 1/4 cup chopped toasted almonds
  • 1/4 cup crumbled feta cheese
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sprouts, orange segments, grapefruit segments, pomegranate seeds, mint leaves, cilantro leaves, toasted almonds, and feta cheese.

  2. Squeeze the lemon juice over the salad and season with salt and pepper.

  3. Toss everything together until well combined.

  4. Serve immediately and enjoy!
