How To Make Spicy Vegetable Pilau with Cucumber Raita

Ingredients
- 2 cups basmati rice
- 2 cups mixed vegetables (carrots, peas, bell peppers)
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 inch ginger, grated
- 2 green chilies, slit
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- 1/2 cup chopped coriander leaves
- Salt to taste
- 2 tbsp oil
- 4 cups water
- for cucumber raita:
- 1 cup plain yogurt
- 1 cucumber, grated
- 1/4 cup chopped mint leaves
- 1/4 cup chopped coriander leaves
- Salt to taste
Instructions

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 15 minutes, then drain.

Heat oil in a large pan or pot. Add cumin seeds and let them splutter.

Add chopped onions, minced garlic, grated ginger, and slit green chilies. Sauté until onions turn golden brown.

Add the mixed vegetables and cook for 2-3 minutes.

Add turmeric powder, red chili powder, and salt. Mix well.

Add drained basmati rice to the pan and gently stir to coat the rice with the spices.

Pour in 4 cups of water and bring to a boil. Reduce heat to low, cover the pan, and let the rice cook for 15-20 minutes or until the rice is cooked and the water is absorbed.

Meanwhile, prepare the cucumber raita by mixing grated cucumber, plain yogurt, chopped mint leaves, chopped coriander leaves, and salt in a bowl. Refrigerate until serving.

Once the rice is cooked, fluff it with a fork and sprinkle garam masala and chopped coriander leaves on top. Mix gently to combine.

Serve the spicy vegetable pilau hot with cucumber raita on the side.
