How To Make Spiced Cauliflower Hummus

Ingredients
- 1 medium head of cauliflower, cut into florets
- 3 tablespoons olive oil, divided
- 2 garlic cloves, minced
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (optional, for added heat)
- 1 can (15 ounces) chickpeas, drained and rinsed
- 3 tablespoons tahini
- 2 tablespoons lemon juice
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Preheat your oven to 400°F (200°C).

Toss the cauliflower florets with 2 tablespoons of olive oil, minced garlic, cumin, paprika, turmeric, and cayenne pepper. Spread out in a single layer on a baking sheet.

Roast the cauliflower in the preheated oven for 25 minutes or until tender and slightly browned, stirring once halfway through cooking.

In a food processor or blender, combine the roasted cauliflower, chickpeas, tahini, lemon juice, remaining tablespoon of olive oil, salt, and pepper. Pulse until smooth and creamy.

Taste and adjust seasonings as desired. If the hummus is too thick, you can add a little water or additional olive oil to achieve your desired consistency.

Transfer the spiced cauliflower hummus to a serving dish and garnish with fresh parsley.

Serve with pita bread, vegetable sticks, or your favorite crackers.
