Ingredients
- 4 slices of crusty bread
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 can (400g) of diced tomatoes
- 2 cups of vegetable broth
- 1 teaspoon of dried basil
- Salt and pepper to taste
- Fresh basil leaves, for garnish
Instructions

Toast the bread slices until golden and set aside.

In a large pot, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

Add the diced tomatoes, vegetable broth, dried basil, salt, and pepper. Bring to a boil, then reduce heat to low and let simmer for 10 minutes.

Use an immersion blender to blend the soup until smooth, or transfer to a blender and blend in batches until smooth.

Serve the soup hot, with a slice of toasted bread on top. Garnish with fresh basil leaves.
