- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small red onion, thinly sliced
- 1/4 cup of extra virgin olive oil
- 2 tablespoons of red wine vinegar
- 1 teaspoon of dried oregano
- Salt and pepper to taste

In a large bowl, combine the tomatoes, bell peppers, and red onion.
