Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 1 cup vegetable broth
- Salt and pepper, to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapenos
Instructions

Heat olive oil in a large pot over medium heat. Add onion, garlic, and bell pepper. Cook until softened, about 5 minutes.

Stir in smoked paprika, cumin, and chili powder. Cook for another minute.

Add black beans, diced tomatoes, and vegetable broth to the pot. Bring to a simmer and let cook for 20 minutes.

Season with salt and pepper to taste.
