In a large bowl, combine the grated halloumi, courgette, spring onions, sesame seeds, oregano, salt, black pepper, flour, and beaten eggs. Mix well to combine.

Heat vegetable oil in a frying pan over medium heat. Spoon the fritter mixture into the pan, forming small patties. Cook for 3-4 minutes on each side, until golden brown and crispy. Remove from the pan and drain on a paper towel.

In a small saucepan, heat the honey and chilli flakes together over low heat until warmed through.

Drizzle the chilli honey over the fritters and serve hot.
